Ingredients:
2 medium zucchinis, sliced lengthwise into 1/4-inch thick strips
2 ears of corn, husked
1 red bell pepper, diced
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
1/2 teaspoon ground cumin
Instructions:
Preheat your grill to medium-high heat.
Brush the zucchini strips and corn ears with a little olive oil.
Grill the zucchini strips for about 2-3 minutes per side, until tender and slightly charred.
Grill the corn ears, turning occasionally, until lightly charred and cooked through, about 10 minutes.
Remove the zucchini and corn from the grill and let cool slightly.
Cut the grilled zucchini strips into bite-sized pieces.
Cut the corn kernels off the cob.
In a large bowl, combine the grilled zucchini, corn kernels, diced red bell pepper, and chopped cilantro.
In a small bowl, whisk together the lime juice, olive oil, salt, pepper, and ground cumin.
Pour the dressing over the salad and toss to combine.
